How to cook it

Big steak, same rule: hot pan, short time, real rest.

Thaw overnight in the fridge.
Pat dry and let it sit out 30 minutes.
Season generously with salt and pepper.
Sear on high heat, 4 to 5 minutes per side for medium rare.
Rest 5 minutes before slicing.
