Because you should know what you're paying before you check out. Every pack is one price. No weight math, no card adjustments after we pack it. Cuts that vary a lot, like whole birds and brisket, are sold by weight band so you pick the size you want.
Shipped orders have an $85 minimum. A box needs enough frozen mass to stay cold on the road. Farm pickup has no minimum.
Call or email us before it ships and we'll sort it out. Orders ship Mondays and Wednesdays, so the cutoffs are Saturday and Monday.
Shipping
We ship UPS on Mondays and Wednesdays. Order by Saturday and it leaves Monday. Order by Monday and it leaves Wednesday. Everything is vacuum-sealed, frozen solid, and packed with gel packs in an insulated box so it arrives ready for your freezer.
Orders over $165 ship free by ground. Below that, you see the ground rate at checkout. Farther from Wisconsin, where ground can't make it in two days, we use two-day air, priced by weight.
The lower 48 states.
Frozen or firm and cold to the touch, yes. A little softening at the edges is normal and does not hurt the meat. Unpack it as soon as it lands. If anything arrives warm, contact us the same day and we make it right.
Farm pickup
Yes. Choose pickup at checkout. We pack your order within two days and send you a note when it's ready. Then come by any day during daylight hours. It's waiting in the self-serve freezer, labeled with your name.
W2252 Riemer Rd, Brodhead, Wisconsin, about an hour south of Madison. Pull into the driveway and up to the shed. Your order is in freezer number 1, the first one on the left when you walk in, in a box or bag with your name and the number of parcels on it.
Our meat
On our farm outside Brodhead, Wisconsin, and by a few partner farms we can name. Our beef is raised with Revival Cattle Co. near Verona. Cox Hill Farm in Brooklyn raises our chickens outdoors on pasture. Our wild Alaska salmon and sablefish come from Bering Bounty, caught by Captain Mark in the Bering Sea. Turkeys, hogs, and cattle live here on our pasture.
Our beef and lamb are 100% grass-fed and finished. No grain, ever. Our pork, chicken, and turkey live outdoors on pasture and get non-GMO feed on top of what they forage. Every animal is rotated to fresh pasture regularly.
No. No antibiotics, no added hormones, no steroids, no animal by-products. Our sausages, brats, and bacon are made with no MSG, no gluten, and no synthetic nitrates. Plain cuts like steaks, roasts, chops, and ground have nothing added at all.
Our land is certified organic and we farm regeneratively, but the meat itself is not certified organic because our favorite local butchers are not certified. We know them, we trust them, and we hold them to our standards. Our farm is also Audubon Certified Bird-Friendly Land.
Storage and cooking
Vacuum-sealed, up to 12 months at full quality. Best flavor inside six.
Overnight in the fridge for steaks, chops, and ground. A roast or a whole bird takes a day or two. In a hurry, a cold water bath in the sealed pack takes 30 to 60 minutes. Never the microwave, never the counter.
Every product page has cooking steps and a recipe or two. There's more in the Riemer kitchen.
Cows and hogs
You can. We sell quarters and halves, plus a 30-pound Beef Bundle and a half lamb as the Lamb Sampler Box. Quarters and halves ship by UPS ground only, or you can pick them up at the farm. For a half hog, call Kristin. See Cows & Hogs.
The 30-pound Beef Bundle fits in the freezer above your fridge. A quarter needs a small chest freezer, about 3.5 cubic feet. A half fills a 7 cubic foot chest freezer.
The guarantee
Tell us. Damaged, missing, arrived warm, or you just don't love it: email or call and we make it right with a replacement or a refund, your call. No claim forms, no photo evidence.
We can't cover a package sent to a wrong address you entered, a refused delivery, or a box left outside for more than a day after it arrived. UPS charges us $16 to fix a wrong address, so we pass that one along. Everything else, we take care of.
