How to cook it

Take them out 20 minutes early.

Drizzle with olive oil and season with salt, pepper, and some fresh herbs from the garden (thyme and rosemary are classic) for a decadent and delightful dinner.

Sear in a hot pan or grill 3 to 4 minutes a side for medium rare. Rest 5 minutes.
