How to cook it

Roast them like a small roast, not like chicken.

Thaw overnight in the fridge.
Rub with oil, salt and your favorite turkey seasoning, or brush with barbecue sauce.
Roast at 350 for about 60 to 90 minutes, until the meat pulls from the bone and reads 165 near the bone.
Rest 10 minutes.
