How to cook it

Keep the tenderloin side away from the hottest part of the grill so both sides finish together.

Thaw overnight in the fridge.
Pat dry and let it sit out 30 minutes.
Season generously with salt and pepper.
Sear on high heat, 3 to 4 minutes per side for medium rare.
Rest 5 minutes before slicing.
