How to cook it

Stew wants time, kabobs want heat.

For stew: brown the cubes hard in batches, then simmer with stock and vegetables 2 to 3 hours until fork tender.
For kabobs: marinate 2 to 8 hours, skewer, grill over high heat 8 to 10 minutes, turning.
