How to cook it

Fast and hot is the whole trick.

Soak in milk 30 to 60 minutes, then pat dry.
Dredge in seasoned flour.
Sear in butter over medium high, 2 to 3 minutes a side. Pink in the middle, never gray.
Onions in the same pan are the classic move.
