How to cook it

Lean steak cooks quicker than you think. Pull it early.

Thaw overnight in the fridge.
Pat dry and let it sit out 30 minutes.
Season generously with salt and pepper.
Sear on high heat, about 3 minutes per side for medium rare.
Rest 5 minutes before slicing.
